I know, it's killing some of you with a green thumb. You're looking around and there's sunshine but when you walk outside you feel like grabbing your winter coat. Fortunately, God made cold-tolerant vegetables! Yup, don't hesitate to get some mud on your winter coat! Pull out your shovels, till that soil and plant some broccoli, cabbage, carrots, chives, lettuce, peas, radishes, Swiss chard (and they're so pretty with their colors too), and spinach to name a few.
And for futures sake, keep planting your family’s favorite vegetables, but I strongly recommend that different new vegetables and newer varieties be tried. Utah Gardeners can grow asparagus, beans, broccoli, cauliflower, corn, eggplant, endive, kale, onion, parsley, peas, rhubarb, salsify, Swiss chard, and tomatoes. Seasoning and flavoring herbs are not listed, but they, too, grow well in Utah.
